How do weekday lunch, dinner and weekend prices differ?

Does the Zhongxiao East branch serve the NT$1,880 Ultimate Japanese Wagyu set?
No. The official menu limits the Ultimate Japanese Wagyu set (Japanese A5 cuts, NT$1,880) to nine branches: Taichung Wenxin Chongde, Kaohsiung Bo'ai, Taipei Roosevelt, Taoyuan Tongde, Toufen Shangshun, Chiayi Chuiyang, Zhubei Guangming, Xindian Minquan and Taipei Ximen. Zhongxiao East is not on the list. Here you can add a plate of Japanese A5 Kuroge wagyu to any set for NT$459 (regular NT$599, one per person).
Which broths are there, and what are the paid add-ons?
The standard broth is scallop-kombu. For NT$39 per table you can switch to one of five flavoured broths: spicy Sichuan pepper, red-miso chicken paitan, beef broth, Kyushu garlic, or tomato kombu. Wagyu sets can add a sukiyaki option for NT$69 per person. À la carte: seared wagyu sushi NT$129 for 2, taiyaki NT$89, Orion draft beer NT$130 a bottle (all from the official menu).
